Ice is one of the few things in your building that customers put straight in their mouths, and it comes from a machine most owners never look at until it quits. In central Arkansas, the most common reason a healthy ice machine starts making bad ice, or less of it, is a water filter that should have been changed months ago.
Central Arkansas water and what it leaves behind
Water here carries dissolved minerals, and how much varies by system, by season, and by whether a building is on city water or a well. When that water is frozen and refrozen across an evaporator, the minerals do not freeze with it. They are left behind as scale: a hard white or gray crust on the evaporator plate, the water distribution tube, the sump and the float. A filter catches sediment and reduces chlorine taste before the water ever reaches those parts. It is not a water softener and it will not stop scale entirely, but it is the cheapest thing standing between your machine and a scaled-up cabinet.
Then add the summer load. Ice demand in a Conway or Little Rock kitchen in July is nothing like January, so the machine runs more cycles, pushes more water through the cartridge, and reaches the end of that cartridge sooner than the calendar suggests.
What a clogged filter does to production and taste
A filter cartridge is a restriction by design. As it loads with sediment the restriction grows and less water reaches the machine each cycle. What you see on the floor is:
- Thin, hollow or cloudy cubes instead of full clear ones
- Ice that breaks apart or melts fast in a glass
- Odd harvest behavior, or ice that will not release from the evaporator
- A bin that no longer fills before the lunch rush
- Off taste or a chlorine smell in the ice, and complaints about the soda
Taste is the one that costs you quietly. Almost nobody sends back a drink for bad ice. They just decide the drinks here are not very good.
Realistic change intervals
Manufacturers commonly publish a six-month filter interval, and that is a fair starting point for an average machine on average water. Treat it as a floor, not a promise, and adjust for:
- Volume, since a high-output machine feeding a grocery deli or a busy bar loads a cartridge far faster than an undercounter unit in an office break room
- Water quality, because harder or dirtier incoming water shortens cartridge life and a building on a well is a different situation than one on city water
- Season, since heavy summer production can cut a six-month cartridge down to three or four months of useful life
- Line work, because a water main break or digging nearby can load a filter in days
The practical approach most operators land on is simple: change on a fixed schedule, write the date on the cartridge with a marker, and move the date up if ice quality slides before you get there. Twice a year is a common baseline. Three or four times is normal for heavy summer output.
Cleaning is not the same as filtering
A new filter does not remove scale already inside the machine. Those are two separate jobs. The filter protects the machine going forward; a descale and sanitize removes what got past the last one. Changing filters faithfully while never cleaning the cabinet still ends in a service call.
What a skipped filter costs
Scale is an insulator. Once it coats the evaporator, the machine runs longer to make the same ice, which means more run time, more electricity and more wear on parts sized for normal cycles. From there the failures get expensive: water valves and pumps that stick or fail from sediment, float switches that read wrong and either overfill or starve the machine, and harvest problems that leave ice welded to the plate.
Past that point the numbers stop being small. Anything involving refrigerant, sealed-system parts, compressors or the electrical side of the machine is licensed, EPA-regulated work and belongs to a certified technician. Do not open that part of the machine yourself, and do not hand it to a handyman. A filter cartridge is one of the least expensive parts in the building. A compressor is one of the most.
What you can handle and what to hand off
Owners and managers can reasonably swap a cartridge on the manufacturer-listed head, flush the new cartridge per the instructions, log the date, keep the condenser area clear, and watch cube shape and bin levels for early warning. Leave to a licensed technician the descale and sanitize, water pressure checks, and any diagnosis touching refrigerant, gas, wiring or the compressor.
