When the cook line hits mid-shift and the kitchen climbs past what anybody can stand, most owners look at the air conditioning first. Nine times out of ten that is not the whole story. Kitchen comfort is a ventilation problem, and ventilation is a balance problem: what the hood pulls out has to be replaced by air coming back in. When that balance drifts, you get heat, smoke that hangs, odors in the dining room and doors that fight you.
Exhaust Is Only Half the System
A commercial hood does two things. It captures the heat, smoke and grease-laden vapor coming off your equipment, and it moves that air outside through a fan on the roof. The other half of the system is make-up air, usually a dedicated MUA unit that brings in an equivalent volume of outside air, tempered so it is not blasting your staff with July humidity or raw January cold.
If the exhaust fan is moving air but the make-up air unit is off, undersized, or its damper is stuck, the building goes negative. The kitchen then pulls replacement air from wherever it can find it: under the front door, through the dining room, down a water heater flue. That last one matters. A negative kitchen can pull combustion gases back down the vent of a gas appliance instead of letting them rise. If you suspect anything of the kind, shut it down and get a licensed technician on site. That is not a wait-and-see item, and it is never a DIY check.
Signs Your Kitchen Is Out of Balance
- Smoke or steam rolls out the front lip of the hood instead of being captured.
- Exterior doors are hard to pull open, or they whistle and slam.
- Odors migrate into the dining room, the restrooms or a neighboring tenant space.
- Pilot lights or burner flames flutter and lift when the hood is running.
- The line is hot even though the AC is running and the thermostat is satisfied.
- The exhaust fan is louder than it used to be, or the roof curb is rattling.
Belts, Bearings and Motors Fail Quietly
Most exhaust performance loss is mechanical and gradual, which is exactly why it sneaks up on a kitchen. A belt-driven upblast fan loses tension over months. A slipping or glazed belt still turns the wheel, so nobody notices the wheel is turning slower until capture goes bad. Sheaves wear, bearings dry out, and the fan wheel picks up grease and debris that throw it out of balance and cut airflow.
Motors are the other common item. An exhaust or make-up air motor drawing high amps, running hot, or cycling on thermal overload will keep working right up until it does not, usually on a Friday night. Same goes for MUA blower assemblies, filter racks packed solid with dust, and dampers that stopped opening a season ago. Belt tension, bearing condition, wheel condition and motor amp draw are standard items on a preventive maintenance visit, and they are worth catching before the fan quits.
Controls Keep the Two Halves in Step
Exhaust and make-up air are supposed to start, stop and modulate together. That interlock lives in the controls: hood switches, contactors, relays, time clocks, temperature or optical sensors on variable-speed systems, and the building management system if you have one. When a control fails, the symptom looks like a fan problem. The exhaust runs full tilt while the MUA unit sits idle, the MUA runs untempered and dumps outside air on the line, or a variable-speed hood stays stuck on low through the dinner rush.
Controls also tie into fire suppression. When the suppression system trips, it should shut off fuel to the appliances and handle the fans per the system design. Wiring, gas valves and suppression interlocks are licensed work. Have a qualified technician verify them, and never bypass a control or jumper a switch to keep a fan running.
Comfort and Code Are the Same Conversation
A balanced kitchen is not just a nicer place to work. Mechanical codes set requirements for hood capture, exhaust rates and replacement air, and inspectors are looking at whether the system does what it was designed to do. A hood that will not capture, an MUA unit that was shut off to save on utilities, or a fan running the wrong belt are all findings waiting to happen. Fixing airflow usually fixes comfort, odor complaints and your inspection at the same time.

- Motor amp draw, overloads and electrical connections
- Make-up air unit operation, filters, dampers and tempering
- Hood capture at the appliance line, and filter condition
- Controls, interlocks and variable-speed operation
- Building balance overall, and where replacement air is actually coming from
Grease cleaning of hoods and ductwork is a separate, specialized service on its own schedule. Repair and cleaning work together, but they are not the same visit.
