A new walk-in cooler, a bigger fryer battery, a second ice machine — the equipment decision usually gets made first, and the electrical gets checked later, if at all. That order causes problems. Commercial kitchen and refrigeration equipment draws real power, and your building's electrical panel, wiring, and breakers were sized for what was there when the building was wired, not for what you're adding now.
Voltage and Phase Matter Before You Buy
Commercial equipment is built to run on a specific voltage and phase, and manufacturers spec it for a reason. Common setups in central Arkansas restaurants and grocery buildings include single-phase 120/208V or 120/240V, and three-phase 208V or 480V for larger compressors, walk-in refrigeration systems, and some cooking equipment. Before you sign off on a new piece of equipment, confirm:
- What voltage and phase the equipment requires (check the spec plate or manufacturer literature, not a guess)
- What voltage and phase your building actually has available at the panel
- Whether the circuit you're planning to use matches, or whether new wiring is needed
A single-phase-only building can't just plug in three-phase equipment, and mismatched voltage doesn't just fail to work — it can damage motors, compressors, and control boards the first time it's powered up.
Breaker and Panel Capacity
Even when voltage and phase are correct, the breaker feeding that circuit has to be rated for the equipment's actual electrical draw, and the panel itself has to have room and capacity for the added load. A panel that's already running close to its limit with existing refrigeration, HVAC, and kitchen loads may not have anything left to give a new fryer, oven, or condensing unit — especially if that equipment has a high startup draw, which is common with compressors and motors.
This is not something to estimate from a nameplate number at the counter. A licensed electrician needs to look at the actual panel, the existing load, and the equipment's requirements together before equipment gets ordered or installed. Finding out the panel can't support it after the walk-in is sitting in your parking lot is a far more expensive problem than finding out beforehand.
Why the Extension Cord "Fix" Backfires
When a new piece of equipment doesn't have a proper circuit nearby, the tempting shortcut is an extension cord or a long run of the wrong-gauge wire to the nearest outlet. This is one of the most common ways commercial equipment gets damaged early, and it also creates a real fire and safety risk. Here's what tends to happen:
- Undersized cords and wiring can't carry the equipment's full load, so they heat up under sustained use
- Voltage drop across a long or thin cord starves the motor of the power it needs to start and run correctly
- Motors and compressors running on low or unstable voltage draw more amperage trying to compensate, which overheats windings and shortens their life
- Breakers trip repeatedly because the circuit is being asked to carry more than it's rated for, or because the equipment is drawing abnormal current trying to compensate for bad voltage
Repeated trips and restarts are hard on compressors and motors in particular. Every restart is a surge, and a piece of equipment that's cycling on a marginal circuit is aging faster than it should, often without anyone realizing why it's failing early.
Get the Electrical Checked Before the Equipment Arrives
The right time to look at panel capacity, circuit sizing, and voltage/phase compatibility is during the planning stage, before a fryer, cooler, ice machine, or piece of cooking equipment is ordered. It's a straightforward site visit for a licensed electrician, and it saves you from discovering a mismatch on delivery day. Any electrical work — new circuits, panel upgrades, or connecting new equipment — should be handled by a licensed technician. This isn't a DIY job, and it isn't one for whoever happens to be handy with tools that day.
