When a commercial dishwasher stops cleaning or stops heating, it isn't just an annoyance — it slows your whole line and puts you out of step with the Food Code. Before you call for commercial dishwasher repair, it helps to understand what's actually going wrong. Most cleaning and heating complaints trace back to a handful of systems: water temperature, detergent dosing, spray arms, drainage, and the booster heater. Here's how a service tech thinks through it.

Water and Rinse Temperatures Come First

Temperature does most of the work in a commercial machine. The FDA Food Code sets clear targets: for high-temp (hot-water sanitizing) machines, the final sanitizing rinse should generally reach at least 180°F at the manifold, with the wash tank held hot enough to cut grease. Warewashing surfaces need to see roughly 160°F. For low-temp (chemical-sanitizing) machines, wash water still needs to stay hot while a sanitizer like chlorine does the sanitizing at lower temperatures.

If dishes come out greasy or your test strips and thermometer show low readings, temperature is the first suspect. Incoming hot water that's too cool, a struggling water heater, or scale buildup on heating elements can all pull temps below spec. Check your incoming water temperature at the source — many machines need 140°F or hotter arriving at the unit to do their job.

Detergent Dosing and Water Quality

A machine that looks like it's running fine can still leave film, spots, or a cloudy haze on glassware. That's usually a chemistry problem, not a mechanical one. Detergent and rinse-aid dispensers dose automatically, and when a pickup tube cracks, a line clogs, or a peristaltic pump tube wears out, dosing drifts — too little detergent and food doesn't lift; too much and you get residue.

Central Arkansas water is often hard, and hard water is the quiet enemy of any dish machine. Minerals build scale on elements, spray arms, and jets, drop your heat transfer, and leave spotting. If you're fighting film across the board, have your dosing checked and ask about water hardness and a scale treatment plan.

Spray Arms and Wash/Rinse Jets

Water has to hit every surface with force to clean it. Over time, spray arm holes clog with mineral scale, bits of food, or broken toothpicks and labels. When jets clog, coverage goes patchy — one rack washes clean, the next comes out spotty. A tech will pull the wash and rinse arms, clear the jets, confirm they spin freely, and make sure nothing is blocking their path. Overloaded or wrongly stacked racks cause the same symptom, so loading habits matter too.

Drain Problems and Dirty Wash Water

If the machine won't drain fully between cycles, it's washing with dirty water — and dirty water can't clean. A clogged drain, a stuck drain valve, a worn overflow tube, or a scrap-filled tank all leave grease and debris behind. You'll often notice standing water, a foul smell, or a greasy film that just won't quit. Keeping scrap screens clean and the tank emptied at end of day prevents a lot of this, but a valve or pump that won't cycle needs a technician.

The Booster Heater

High-temp machines rely on a booster heater to lift that final rinse to sanitizing temperature. When the booster fails or under-performs — a failing element, scale buildup, a tripped high-limit, or a control fault — dishes come out wet and unsanitized because they never got hot enough to flash-dry. If your rinse gauge reads low and won't recover, the booster is a prime suspect.

What to Leave to a Licensed Technician

You can clear spray jets, rinse screens, empty the tank, and check your test strips safely. But heating elements, boosters, and dispensers involve electrical connections and sometimes gas-fired water heating — and those are not DIY territory. Anything involving electrical components, gas, or a machine's high-voltage heating circuits should be diagnosed and repaired by a licensed technician. It's a safety issue, and it protects your equipment and your health-inspection standing.
