Charbroiler Care: Burners, Radiants and Grates

By Commercial Service Company · November 3, 2026

Flames rise through a grease-caked grill grate covered in burnt food debris

A charbroiler that's running right gives you even heat across the whole cooking surface and a flame pattern you can trust during a rush. When burners clog or radiants warp, you get hot spots, cold spots, and food that cooks unevenly no matter how careful your cooks are. Most of what keeps a charbroiler in good shape is daily habit, not special tools. The gas side is a different story, and that part belongs to a licensed technician.

What Causes Uneven Flames

Uneven flames almost always trace back to one of a few things:

  • Grease and food debris blocking the burner ports so gas can't escape evenly
  • Warped radiants or briquettes sitting unevenly over the burner, blocking heat in some spots and letting it through in others
  • Grease buildup on grates that insulates part of the cooking surface
  • A burner that's been knocked out of position during cleaning or heavy use

If you notice one section of the broiler running hotter or cooler than the rest, don't just compensate by moving food around. That's a sign something downstream needs attention, and ignoring it for weeks tends to make the repair bigger, not smaller.

Daily Cleaning Habits

These are the habits that keep a charbroiler reliable day to day:

  • Scrape grates while they're still warm, before grease has a chance to harden
  • Empty and wipe down the grease trough or drip tray at the end of every shift
  • Brush loose debris off the top of the radiants where you can see it, without disturbing their position
  • Check that the flame pattern looks even across the full width before the first order goes on
  • Wipe down the front controls and knobs so grease doesn't build up around them

None of this takes more than a few minutes, but skipping it even for a few days lets grease bake on, and baked-on grease is a lot harder to remove than fresh grease.

Weekly Deeper Cleaning

Once a week, go a level deeper:

  • Pull the grates and radiants (once the unit is cool) and soak or scrub them separately
  • Check radiants for warping, cracking, or uneven sitting over the burners and reposition or replace as needed
  • Look at the burner ports themselves for visible grease clogging and brush out what you can reach from the top
  • Clean the catch pan and surrounding sheet metal where grease tends to collect unnoticed
  • Check that grates sit level and flat, since a warped grate changes how heat transfers to food even if the burner underneath is fine

This weekly pass is where most small problems get caught before they turn into a broiler that won't light evenly or holds heat unevenly under a full rush.

When It's a Gas Problem, Not a Cleaning Problem

Some issues look like a cleaning problem but aren't. If you see any of the following, stop troubleshooting and call a licensed technician instead of pulling the unit apart further:

  • A burner that won't light, lights with a delay, or lights with a pop
  • A smell of gas around the unit at any point, before or after cleaning
  • Flames that are yellow or orange instead of blue, even after a thorough cleaning
  • A pilot or igniter that won't hold or keeps going out
  • Uneven flame that doesn't improve after a full burner and radiant cleaning

Gas connections, burner orifices, and valve adjustments are not something to diagnose or adjust yourself. A technician can pressure-test the line, check the burner's air-to-gas mixture, and confirm the unit is safe to run before you put it back into service. That's not a step to skip to save a day of downtime.

Keeping Your Broiler in Rotation

A charbroiler that gets scraped daily and broken down weekly will hold its flame pattern far longer than one that only gets attention when something visibly goes wrong. Build the daily habits into closing checklists, and treat the weekly teardown as non-negotiable even during busy stretches. It's the stretches where you're busiest that a broiler running hot on one side and cool on the other costs you the most in wasted product and slow tickets.
